Calabretta is a cult Etna traditionalist working old, often ungrafted vines on the mountain's north slope, and Cala Cala is his everyday red: a non vintage, lot numbered blend (this is Lot 30) of Nerello Mascalese with a splash of Nerello Cappuccio. Here's the trick it's built largely from declassified Etna Rosso and given long aging in big old casks, so you get an unusually mature, savory, Nebbiolo like wine for
