Domaine Nicolas Rossignol Bourgogne Rouge 2023 NO20231101 This is the Cote ChalonnaiseNicolas Rossignol set up shop in Volnay in 1997 and has spent the years since building one of the most respected addresses on the Cte de Beaune (no relation, by the way, to Gevrey Chambertin's Rossignol Trapet). The farming leans biodynamic, the cellar work is patient, and the wines are built for the table rather than the cellar shelf.
